¼ t. baking powder
½ T. vegetable oil

3 T. milk
1 T. sugar
¼ t. peppermint extract
¼ t. vanilla extract

Toppings: (optional)
whipped cream, crushed candy cane, mini marshmallows

Instructions:

  1. Add all ingredients into a microwave-safe mug. Mix with a fork or a small whisk until the batter is smooth.
  2. Microwave for 1 minute, or until toothpick inserted in the center comes out clean. If it still looks uncooked after 1 minute, put the mug back into the microwave to cook 15 seconds more at a time. Top the cake with your favorite toppings. Eat warm and enjoy!
